1000ml of yeasty starter added (forgot to let it settle out of suspension for 2 hours).
Starter didn't foam or bubble at all during 48 hour growth phase - so was concerned about its viability.
However, Fermenator starting bubbling after approx 2 hours so appears to be ok |

Need to check gravity 24-hours from now but expect at 82% attenuation we are now there. 18oC was a high temperature for fermentation when checking so hope all is ok. |

Green beer transferred from Fermenator to secondary ready for lagering. Placed indoors at 22oC for 2.5 days as a diacetyl rest.
Yeast had once again flocced perfectly to the bottom of the cone and transfer was clean and clear. |

After 2.5 day diacetyl rest, secondary vessel transferred to fridge at 3-5oC for 4 weeks before kegging. Need to add finings/polyclar 1 week before kegging (18/02) |

200ml and 5g of polyclar added, stirred and purged with CO2 in the churn.
Will be ready for packaging on Monday |

Somewhat lower yield than expected, not sure where the losses occurred.
1 and 3/4 kegs filled and purged with CO2.
Added to kegerator at 3-4oC and primed/conditioned at 20 psi (higher than any previous beers!!!) |

Disposed of as has a poor flavour. Obvious fermentation inconsistencies in temperature lead to a poor finished product |
