Notes

This is the first beer I will be brewing with my new "super rig": an all-electric RIMS system with a plate chiller and hop-back infuser. Because I can now step-mash with ease, as well as hop infuse right before hitting the chiller, it's time to stress-test the new system with a massive Imperial American Strong Ale.

Goal should be to do way better than 69% Brew House efficiency recipe calls for, ideally 78% or higher, so let's do things right...

For the hops, don't use Simcoe for the HopRocket hopback, but Eureka instead.

Mash: Target 5.3 as the Mash pH; test at 0 (should be ~5.2) and 15 (~5.3) minutes, and adjust accordingly. The mash steps should encourage B-Amylase at first, balanced amylase, and then A-amylase to finish with a nice complex but fermentable wort.
