Pitched 1 pack each US-05 and Verdant IPA. Direct pitch no rehydration. Spilled a little of the US-05 while opening, but not much. |

Put 3 gallons into the 3 gal keg. Then put the rest into the sanitizer bucket and filled seven bottles with the glass measuring cup. Added 1.5 ml of maple syrup to each bottle and capped. |

From the keg this has always been a little harsh tasting. Hard to describe, but maybe a little too acrid, bitter, or overly roasted. Not smooth. Sometimes I'll put in 1 - 2 mL of bourbon per 8 oz glass (I think 2 mL of Early Tims BiB is best) but this is never a beer I am excited about.
However, I just tried one of the bottles conditioned with maple syrup to carbonate. These have been in the basement for ~6 months. Very good! Carbonation was low, but just right for the style. The smoothness and sweetness that I want in the kegged version is there without (or possibly balancing?) the acrid roastyness. I don't know if it's the RT conditioning or the maple syrup, but it seems like a completely different (and way better) beer in the bottle. |
