I wasn’t fixed on a sparge volume and instead focussed on the gravity of the runnings being mindful that allowing the runnings to get to thin drags tannins out of the grain bed. 1st runnings were 1.072 so I continued to sparge until runnings were about 1.020 and stopped. This coincided with about 26 litres collected at PBG stated. |

No dramas with boil this time. Both doors open in garage helped with condensation. Different hop schedule with a 30 min addition to reduce bitterness and improve flavour. I have adjusted the kettle dead space as I’m not getting the predictability of either OG or volume. This batch is 6 up on gravity and 2 litres under. |

Cooling went well. Too well the probe was in the trub giving a higher reading. Over cooled the wort to 16/18 degrees. No drama. Pitched yeast and sat it on the heat pad until at 20. I need to read up on liquoring back to reduce OG and increase volume. |

Hope that’s it completed. Very cloudy but I plan to filter it anyway. It’s certainly strong. |

Very pleased with this beer although it is much stronger than planned. The extra week conditioning while I was ill has ensured a great carbonation. There is a haze to the overall finish which is the only criticism but I forgot to add the finings when I racked it into the secondary. |
