I think some sugar fermented out since the tasting. And some oxygen impact. Tastes a little umami. |

A little bit roaster than I wanted... not sure if it’s that dark beer flavor I keep getting. If so, it’s a mash or boil problem, not a fermentation problem.
Love this yeast though. |

Krausen was never huge. Maybe this is underpitched, maybe it’s because the wort was fairly clear, maybe because temps were kept down. Similar to the T58 bunny foo foo, fermentation has dramatically slowed, but there’s some floating break material. Will give it another temperature controlled week, then will take off the evap setup when the new Beer needs it. Undecided on bulk lagering. |

Volume short, AGAIN. Let’s try 3.5 Q mash, 3 Q sparge.
Color perfect.
Chilled to 70, pitched, put in fridge. Chilled to 55ish.
Aeration with pump. This better not be a problem.
In closet with evap skirt. No blowoff since volume is low.
First time using this yeast, but it’s supposed to be very temperature tolerant.
We’ll see. |
