Beginning fermentation temperature: 75F

Once fermentation begins, slowly drop the temperature (1 degree per hour) to 55F

Keep the temperature at 55F for 10 days.

Raise the temperature to 65F for 2 days.

Transfer the beer to the secondary and slowly cool the beer to 40F. Lager the beer for 3 weeks.
