Hops : 71 to supply bittering hops. approx 40 IBUs
Eden Mill to supply dry hops.<br />
Yeast : Eden Mill to supply
Water : suitable for IPA.
Packaging : to be confirmed.
Mash temperature : 67ºC
Boil length : 1 hour
Yeast to be supplied by EM (US05) : 1.5kg / 25hl
Fermentation temperature : 20ºC 3-4 days
Temperature free rise at 1020 - 1015 (2nd-3rd day)
Diacetyl rest till negative by diacetyl force test. 4-5 days (>20 ºC )
When negative 18ºC
Dry hop three days. (18ºC)
Conditioning 7 days (<4ºC)
Remove yeast and hops from bottom valve.
Sterile filter
Package into 30L keykeg slimline
CO2 - 4.2 grams per litre.
Dry hopping after diacetyl rest.
