Mash 7.5 quarts water in 12 qt container (1.5 qts per pound)
Mash 110F for 60 minutes
Mash 125F for 30 minutes
Mash 145F for 30 minutes
Mash 160F for 30 minutes
Mash 170F for 15 minutes
Remove bag and drain
Take gravity
Put bag in pasta holder and two gallon pot
Rinse with 170F Water (4 qts). Dunk and rinse several times.
Combine the rise with the wort
Take gravity
Boil for 90 minutes.
45 minutes in to boil, add Saaz hops
60 minutes into boil, add Hellertau hops
