Tested gravity to see if it was time for a diacytl rest. Flavor was very nice with a crisp grainyness and mild continental hop aroma and flavor. I didn't detect any diacytl, but will do the rest anyways to ensure a full fermentation. |

Still fermenting away. I'll leave it for a couple more days before checking and probably doing a diacytl rest. |

This is getting very close to time for the diacytl rest. I will give it another 12 hours, then pull it out from the fermenter for a 3 day rest at room temperature (around 70*F). |

returned carboy to freezer after taking reading. It will sit at 50*F for half a day before temp is dropped to 32*F for lagering. |
