Mashed in 55c 5min raised to 63c rested 25min pulled off 10lt ish decoction. Decocted 20min. Main mash temp dropped to 58c added back decoction raised mash to 69c rested for ten minutes . Then pulled off another 10lt decoction boil for 30min. Added back to mash out temp of 78c .

Sparged 5 LT temp at end of decoction was 65c.
Added chocolate malt to end of mash 10minute. Mash temp = 71.5c after adding decoction. |

Pitched 2.5 Lt starter into wort temp was 13c at pitch ferment set at 12.5c .3c rise. 20 LT wort. |
