Opened the first bottles 1 week after bottling; acetylaldehyde taste is gone, but brew is much sweeter than I expected after tasting sample; 3/5 for flavor; similar to Straight to Ale's Monnkeynaut in the maltiness. Maybe too much crystal malt; recipe is 11.1%, but certain forums have said 5% max. Good hop aroma and flavor but overpowered by sweetness; 4/5 for appearance. Pretty clear considering no cold crash or fining; great head that stayed throughout on first beer, but second bottle was a little thin and flat. Will let bottles sit for another week to compare. |

Tasted the pre-bottled sample. Surprisingly good! Green apple (acetylaldehyde) taste is prominent, but should clean up after a week or two. Good hop aroma and flavor. Fairly fruity for using Columbus (I think a typical bittering hop) only. |

Drank the final bottle that had sat in the fridge for a while; cleared up a decent amount, much clearer than the first bottles (time in refrigerator must have helped); still a bit too sweet, but the malt taste seemed to mellow a bit; a bit of an "alcoholic" taste had developed, seemed pretty boozy, although it is nearly 8%. Overall not a bad beer, especially for the first brew. Onward and upward! |
