Notes

11/12/17- tasting the vermont/brett sac blend. the last gravity was 1.008 and the other one is still going down (I think flagship yeast). The bubble gum character comes a little too much and might not be a good yeast candidate for this beer. Mouthfeel and head retention is perfect and the malt bill works great. However, I would like to use other hops; these are not the best choice for what I'm trying to do. Citra, centennial, summit, galaxy would be better; maybe with a little N. Sauvin thrown in at flameout too. Might be better to just skip 8 minute addition and go either 5,3,0 or 3,0, or 60,0 with a big addition at flameout. It's a pretty bitter beer but I think the 40 IBU's up front is kinda nice regardless how aggressive it is. It will be all telling how the yeast changes this beer when the other 5 gallons hits terminal gravity.
