Pitched most of the yeast slurry from the Porter I kegged today into the 2 batches of Stout. Probably about 1/2-3/4 cup in each fermentor. Temp was higher than I wanted (72), but they are chiling in a cold water bath and should reach 64-65 by the morning. |

Fermenting strongly alreadyat 68. Higher than I wanted, but it was the best I could do under the circumstances. It will be interesting to see if it gives off more esters than my typical schedule with US-04 |

Aroma: Roasted marshmallow. Rich maltiness. Kind of fruitcake aroma from yeast I assume. Smells fucking amazing.
Mouthfeel:
Taste: Medium bodied, incredibly smooth stout that is well-balanced. Not too rich or malty, but not too dry. Just a perfect easy-drinking stout. Super clean. |
