Double crushed grain may have caused the high efficiency, along with sparging with 1.5 gallons and really squeezing the wort out into a plastic bucket.
LESSON: Strike temp was right on! Final temp at mash out was 151.5 F (although I did add some heat since I was going in and out a bunch).
LESSON: Acidifying mash water BF recommendation was 4.6 mL phosphoric. I used 2.5 mL instead. |

Diluted from pre-boil gravity of 1.060 with 1.5 gallons crystal geyser water. Plus, dumped about 0.75 gallons of wort.
LESSON: Always check refractometer calibration! I was about 5 points off initially. Also, refractometer reads about 0.002 high in distilled water. |

Added the Saaz hops at 5 minutes instead of 1 minute by mistake.
pH @ 30 minutes was 5.31, right in the expected range of 5.0 to 5.4. |

ACID CALC OFF. Added 20 mL 10% phosphoric acid to strike water, saved the remainder (BF recommended and additional 23 mL) for the mash. Estimate was way over because checking 5 mins into mash it was pH 5.11. I mistakenly added the additional 23 mL and it dropped to pH 2.99. Then, I added 2.5 g baking soda to bring it back up to pH 5.7. Then added 5 mL phosphoric to get it to pH 5.27 (at 25 minutes into the mash).
LESSON: 16-18 mL would have been perfect in the strike water, not BF's recommended 43 mL. |

Used the sterile siphon transfer. Be sure to fully de-pressurize keg before attaching beverage out connection. The back pressure caused bubbling in the fermenter. Transfer also took quite long, perhaps an hour! |

Had about 0.2 gallons extra in fermenter. Worked well for filling the hydrometer graduated cylinder from the sterile auto siphon by detaching the post connection and pouring from the siphon.
Set regulator to 12 psi and temp is at 36F. This is 2.6 volumes CO2. |

TOO EARLY? Ran approx. 2 pints off before it started to clear. The first tastes were very wheat beer like but also had Oktoberfest character. Then, after further pouring and dumping a jasmine tea taste emerged in the front. Worried it might be BLC cleaner but unlikely since I didn't get it at first, |
