Adding 13g baking soda (to buffer and achieve a target pH of 5.2) along with Karnowski malty beer profile (epsom salt and calcium chloride). pH came out to between 4.6 and 5 (my meter is not the best). I didn't want to add any more baking soda so I let it go.
