Mash thinner than normal at 154 for 60 minutes. Cool mash to 120 and add 1 pound of unmilled Pilsner. Wrap with foil and purge with CO2. Keep temps at 11-115 for 24-36 hours until tart enough. Get rid of top layer of crud on the boil. Check PH. Keep PH around 4. Add lactic acid if necessary. Boil. Add hops. Pitch US-04. Add peach extract at end of boil. Add purred peaches post fermentation. |
