Pale ale is the Briess 2-Row Pale Ale. (difficult to find)
Can't call this beer a true American Strong Ale. It is a hybrid using a DIPA grain/extract bill and swapping the HOPS to a Hallertau (a German Noble Hop) and cutting the amount considerably. I am not a hop head.
3 weeks primary (temp 68 degrees)
4 weeks secondary (temp 64 degrees)
3 weeks bottle (took extra time to carbonate since most of the fermentables are gone by this time)
Ages incredibly well!
Qualities: Very smooth, round and soft mouth feel, not thick, lightly carbonated. Fairly sweet. Doesn't have a boozy smell, but there is a definite alcohol character to it in the nose when you drink. Similar to a good bourbon ale.
Update: This one really needs to age! I bottle aged 12 of these for 8 months and it is night and day different.
