could have collected even more wort, but didn't want to fill up carboy too full
left carboy sitting in 45F cooler while I went climbing
came back, wort @ 50F. Pitched yeast at this temperature.

smells of pears and apples, like the vienna smash lager. There's a slight citrus aroma as well. there's also a stronger/darker malt aroma.
flavor-wise, this is obviously more bitter than the vienna lager. the flavor is somewhat resiny with some slight citrus. I think this will be fantastic with dry hops. The malt flavor in this one is more complex and less sweet than the vienna. there's a subtle toasty/breadiness to it, which is very nice and goes with the mandarin orange flavor very nicely. |

Tasting after only 6 days warm conditioning. The bottle was refrigerated only for ~4 hours.
Appearance: Deep golden color, on the side of orange. Slightly hazy.
Aroma: Slight mandarin orange (probably biased by my knowledge of the hops). A subtle honey & apples. Freshly baked bread, like the ice cream shop on 3rd/20th near DPB. Overall, aroma is very nice, but it's somewhat difficult to detect.
Flavor: Mandarin orange up front, followed by some pear and a bitter finish. Comes across to be about as bitter as some IPAs I've had. Finishes pleasantly dry.
Mouthfeel: Definitely some texture, but again, it finishes very dry. I gave Liz a sample, and the dryness was among the first things she praised.
Overall: I can't wait to taste this again, once some bottles have been given cold conditioning. The aroma is very slight even now, so next time I might use more dry hops, at least with Mandarina Bavaria, whose mandarin flavor/aroma is evidently subtle. |

Appearance: Very slightly hazy, deep golden color. Pours with a fine white head that lasts for a little while.
Aroma: Flowers and mandarin oranges. The orange in particular, not just general citrus, comes through. A hint of pear and freshly baked bread come through as well.
Flavor: A nice bitterness! Orange citrus flavor. A hearty but not overwhelming breadiness. The malt flavor + hop bitterness balance really remind me of eating a citrus fruit. I *love* this malt!
Mouthfeel: medium-dry, with a very, very long bitter finish (not at all unpleasant). Has a "stick to the roof of your mouth" feeling.
Overall: This is a fantastic beer, and even as a SMASH, one that I would make again. I'd love to do more experiments with the koelsch malt. It does very well in here. The color of it is similar to munich, but the flavor is more sophisticated than just "bready". Has a nice sweetness coming through to the end, and the color could work on its own in an (I)PA. |

Appearance: A very clear gold color. White head that appears foamy and lasts a long time.
Aroma: Slight pear and mandarin orange. Not getting too much aroma off of this one. Perhaps a sweet malt aroma in the background as well.
Flavor: sweet, slightly bready malt flavor that gives way to a somewhat intense bitterness. A very noticeable mandarin orange flavor is quite pleasant. The flavor is a bit too balanced towards the bitterness, though I'm really enjoying the mandarin orange flavor in particular. I like the way how this beer starts sweet and malty, but has a very different, bitter finish.
Mouthfeel: medium-bodied and just the right amount of carbonation.
Overall: still a good beer, though I think it's too bitter. Next time, I'd try to lower the IBUs without affecting the overall hop flavor too much. |
