added 1/4 tsp. cacl and 1/2 tsp. lactic acid. ph was 5.27. overshot the first rest by 5 degrees to 127. 2nd rest overshot at 156 was supposed to be 154. was 151 when i uncovered mashed out at 174 for 10 min. put close to 9 1/2 g. culligan water in at start,, |

pitched yeast from saved slurry from centennial blonde 1/2 of it . 34/70 pitched at 58 degrees at 10 p.m. turned temp down to 55 when i pitched |

sample tastes very good. temp was still 61 F sitting on basement floor. put ferm into freezer and turned down temp to 34 F |
