Added 57 g of malic acid to try to lower pH to 3.5. Then added 50 ppm S02 for partial kill. Pitched yeast directly without rehydrating per package directions. Started aging scotch on oak, did .75 cup Glenlivit and .25 cup Ancnoc to up the peat a bit.
One week in getting a lot of sulfur, so added a pinch of WLN1000 and DAP mixed in a bit of boiled water. Will continue doing this until odor abates. Next time rehydrate yeast no matter what the package says.
Ended up adding kupzit at the end of fermentation. Worked like a charm.
Will do two packs of rehydrated yeast when using ale yeasts from now on.

Added 5 crushed tablets campden and 4oz of scotch tinture. Still had a good bit of acidity ... will taste ina few months and back sweeten if needed. |

After one week of carbonation. Very dry, awesome aroma, tasting good buck lacks any oak or scotch so added one more ounce for a total of five. Dial back pH a bit. slightly too tart. |
