Sample from barrel. tastes much better! The hot flavor is nearly gone. It just tastes smooth and warm with some alcohol warming. Think warming the chamber to 70 or the barrel helped. |

I am noticing the "hot" "bitter" maybe astringent flavor. Maybe I should have racked to secondary after fermentation completed on day 2 or 3. |
