Very alcoholy-tasting, probably a complex ester ("hot"). We should keep it on the cool side and keep it in the secondary for a few weeks (3-4), sampling as we go starting at 3 weeks. Letting the beer sit in the sample tube for a while helped gas it off, and it was very delicious, nutty

esters reduced, pecans much more prominent. Hope for this beer yet?!

Prettiest beer ever.

still a little astringent/estery, but we've done all we can :( It does taste much better than it did, and finishes oxidized. Delicious otherwise, will probably be good cold. At least it's orders of magnitude better than the sam adams wee heavy.

Put in the "whorebag" keg.
