- 5 gal @ 170 F + 14.75 lb @ 70 F = 155 F mash
- @ 154.8 F @ 60 min
- @ 154.2 F @ 40 min
got 3 gals and something less than a quarter during first runnings
- @ 163.4 F @ 12 min sparge
got 4 gals and something less than a quarter during second runnings
- used german smoked malt (beechwood) from B&G for 2nd smoke malt edition (used all german malts when available, basically all but the cherrywood in the recipe)

- like a week after the fact, kinda guesing, 1.068 @ 73.5 F raw... did not use offset
- thought it was a bit low gravity wise with a semi high tem around 73.5 F |

- pitched yeast starter, thought the starter was dated around 10-05, maybe a month old from pitch, made 3 starters, 1.5 l @1.036 x 2 + 1.7 l @ 1.036
-- using brewkauser math it should give us maybe 100 bil less cells? hard to compare from other rauchbiers since c.white measurements would have been a lot higher cell counts (300+ billion)
- @ 51 F when pitched
- @ 49.0 F little while after |

- @ 48.5 F. decent lager fermentation beginnings
- raised temp by a degree and a half on regulator (set to 49F now) |
