Maintaining 60F fermentation. Seems to be slowing down a bit. Has a great malty aroma like fresh whole grain bread, but still very yeasty. |

Racked to keg for conditioning. Will condition at ambient 68F for a week to make sure everything is cleaned up. Will move to lagering after this. |

Quick carbed a cleared tasting glass full. Very malt forward. Aroma and flavor are wonderful. Dryish finish, but a little bit of malty sweetness. Seems it needs to have attenuated a bit more. Maybe half the Caramel malt next time? Will be interesting to see how this differs in a month of cold conditioning. |
