07:00 - yeast pitched into culture medium at 15oC on stirrer in Fermentarium. PID set for 11oC and alarm for 13oC. 84 hrs on stirrer planned
Yeast didn't 'fizz' on opening so need to check if it is ok during culture phase |

72 hour diacetyl rest, now 1 tsp of PolyClar added to 500ml boiled water and added into the brew and stirred |

Polyclar added for 24 hrs, beer brite finings added for subsequent 24 hours before packaging.
3 full kegs packaged under CO2 pressure, worked excellently at just 3-4psi, really pushed the beer out. |

Still a little bland with a slight diacetyl taste which is disappointing, so added 20g Citra dry hops to the keg. |

Dry hopping has made an immediate and positive impact to the flavour. However, the pellets have made the brew really cloudy, but it's not particulate so much be an oil haze. Might try and filter the brew. |
