WARNING: Kettle losses > 2% detected which throw off OG calculation for extract/partial mash recipes in batch target 'fermentor' mode. Solution: Reduce kettle losses, misc losses and hops absorption in equipment profile, OR set batch target to 'kettle' and do a full wort boil. See batch target FAQ.

Notes: Started with 1.5 gallon in stockpot, so boiled to reduce down to 1.25 gallons after steeping grains were removed, before moving any further. Inspiring recipe already featured a "get to boil after steeping, add extract, bring to boil again approach" anyways.

Reads at 10 Brix. Complex finish, molasses and anise come through with a hint of spruce. Citrus notes in taste from spruce. No spruce aroma. Add spruce tea at bottling.

Into 10 grams of fully fermented uncaronated wort:
1 drop was just about right, maybe a tiny bit more
2 drops was a bit over the top on aroma, but still good on flavor (could use a tad more on flavor but might block the molasses and anise out from being individually recognized, would instead just be filling out the spruce)

1-2 drops per 10 grams works out to roughly .075 ml of extract into 9.79 ml of beer (given SG is 1.021 and test was with 10 g). For 2.13 gallons I'll want 61 ml of extract to be added at bottling. If volume is more/less add spruce extract equal to 0.7% of the volume in the bottling bucket.

Not quite fully carbonated yet. Practically zero head retention, although this may be influenced by rinse aid use in dishwasher. Aroma is a bit too sprucey, as is the middle. Finish is good though. Definitely dial back the spruce on the next go, maybe to 60%

Notes

Auto-calculated IBU does not include contributions from the spruce tips.

The molasses was full flavor (e.g. stage 2 molasses, after light but before blackstrap).

Spruce tips were from Colorado via http://www.spruceontap.com/
