Notes

Second brewing of experimental usage of sour cherry concentrate. First was delicious but going for more. Attempting to get Redenbach grand cru taste without prolonged aging. Hoping to achieve extra sweetness with use of wheat, corn, and 2 hr boil. More complex sour flavors with Philly sour yeast. A couple week on toasted oak should add barrel aged taste.

*Cherry juice added in secondary. I included it with fermentable ingredients to calculate total gravity/ alcohol.
