Notes

I added HLT water to the boil @ 0 min to lower the SG into the fermentor. 7.15% is a bit too high of an ABV than I was looking for in the final product. I went into the fermentor @ 1.067. I have been finishing a bit shy of the target FG so I am hoping this brew will finish @ 6.25-6.5%

Added the Mulling spices (Bitter Orange, cove, star anis, cinnamon stick and mull berries) to the hop spider in whirlpool for 10 minutes. the aroma cam across instantly.

POST BREW: its too dark, I'd eliminate the Carafa Special Type-III.
