Notes

Yeast - Yeast from Dogfish Head 60 Minute IPA

Step Mash, per Remi at Mout because it is a floor malted pilsner malt.

Ferment at 21C for 1 day
Let temperature rise to 23C
At 23C, dry hop until fermentation complete about 9 days.
Drop temperature to 1C for 6-8 days.
2.5 PSI carbonation.
