Notes

Very experimental. Looking for a traditional brut IPA bur with a bready wheat flavour with final gravity as close to 1.000 as possible.
80L in the HLT 50L in the Mash Tun for striking and salt additions split between the two.
Due to the wheat, I opted to boil for 90 minutes.
I am using Lutra Omega yeast that I harvested from a wheat beer - this is a VERY clean neutral yeast which I believe will pair well with ultra dryness of the style
