Crazy Donkey clone from SantoriniBrewingCompany in Greece.
This beer is very hard to find due to the steep price, specialty and short shelf life, so I did it myself, and the result is pretty close to the original. Loads of flavor, loads of hops, loads of wine-like notes especially at the finish, coming from the Nelson Sauvin hops at boil and dry hop.
Dry hop was removed at 3 days and I find it ideal. After fermentation (7days, but mine finished at 4-5), it was left to mature at the yeast minimum (18c) for 7 days, and after that, cold crashed near freezing for another 7 days.
Yeast: Mangrove Jacks Hophead Alone M66, brings out the hoppy notes, especially at the finish. 2 packs were used, but if you're planning to make it over 1.060 OG, use 2. Mine was right at 1.060, so I used 2, just to be on the safe side.
Color is pretty light, but you can also tweak it, if you are picky with it.
Costs are an estimate, but this one is usually on the pricey side.
