Notes

Spicy Holidays! This recipe is written to emulate a prior winter spiced ale I've brewed, but to simplify the grain bill and mashing schedule to round numbers and single infusion. This may result in a little less body, but with the added spices this difference should hopefully be negligible.

I initially considered using a Saison yeast for extra spiciness, but realized it'd be difficult to tell what flavors came from the yeast and what came from the spices themselves. So, I switched to an Abbaye yeast to avoid that issue and also provide a fruity profile. With some luck, the ultimate flavor will be evocative of a spiced fruit cobbler.
