Overall, pleased with the brew itself. However, some tweaks moving forward would be to reduce the "roast" malt that was used. While the beer was sweet, the use of mud pie provided a semi-sweet chocolate which enhanced the roast flavor as well. Will also want to research the best way to blend the powder mix (if used going forward) as the first gallon was very thick from the powder mix and will want to have that blended better to provide a smoother brew next time. Also would suggest an increase in boil time to provide a thicker body and use less lactose and other non-fermentables to reduce the overall sweetness but still have that thickness that is appropriate for a pastry stout. Furthermore, would look into chocolate wheat/midnight wheat to enhance darkness as the color did not reach the level that I was hoping for (color was dark but more of a deep brown rather than black/opaque). Overall, pleased with the outcome and the beer itself was not overly sweet which was a concern with the level of non-fermentables along with the high finish gravity. |
