Notes
  1. Bring 2.25 gal filtered, dechlorinated water to 160°F.
  2. Add muslin bag of grain to water
  3. Cover, steep at 150°F for one hour. Stir, squeeze bag occasionally.
  4. After 60 minutes, squeeze liquid out of bag with tongs, remove grain, set aside.
  5. Bring wort to boil. At first boil, add 0.25 oz Willamette hops
  6. 30 minutes into boil, add 1 oz maltodextrin, 1/2 tsp yeast nutrient
  7. 10 minutes left in boil, add 0.25 oz Cascade hops
  8. After 60 minutes, cool wort in ice bath to 75°F before straining to fermentor.
  9. Add 1 packet Safale S-05 yeast to wort, let sit 15 minutes. Agitate to aerate, cover, assemble blow-off tube for fermentor.
  10. Ferment 2 weeks at 64°F.
  11. After 2 weeks, dissolve 0.5 oz priming sugar and 0.6 oz raw honey in 1 C water.
  12. Rack beer onto sugar solution. Bottle, condition for 6 weeks

    OG = 1.056
    FG = 1.008
    ABV = 6.3%

    THIS WAS GREAT! Use Caramel (10L) instead of Light Crystal
