Notes
  1. Steeping: Dissolve 3lb DME in 5 gallons to make a wort of approx 1.027. Add steeping grains and bring water to 155*. Hold for 30 minutes.
  2. While bringing to a boil, add the remaining 2 gallons of water. Do not drop the temp of water below the 155*.
  3. Add remaining DME and Cane Sugar.
  4. Follow hop schedule (60 min/15min).
  5. Add yeast nutrient and Whirlflock at 10 minutes.
  6. Add honey at end of boil, prior to (or when you begin cooling...) Just be sure to do it while temp is above 170* to pasteurize.
  7. Dry Hop fermenter prior to adding wort.
  8. Rack when fermentation slows considerably, or stops (approx 7 days).
  9. Use honey for priming sugar when bottling (Approx. 5.65oz/160g).
