Set temp controller to 16C and that's where it was when I pitched the yeast. Had a good little krausen after about 24 hours. Fermented strongly for a 2 or 3 days then krausen started falling and looked clearer. Raised temp to 17.5 or 18 C on Wednesday and 19 C then 20 C on Thursday. Smelled hoppy for the first couple days then some sulfur then lagery. Mmmmm |

Very very good. Nice malty flavor and beautiful pale golden color. Had a bit of haze for the first 2-3 weeks but dropped crystal clear after that. My only complaint is it feels a bit full for a pilsner. Probably could use some regular pilsner malt in the grainbill and maybe a lower mash temp. Also doesn't seem hoppy enough. Could use a touch more bitterness and I'm not really getting much in the way of hop flavor and aroma. Which is weird because I feel like I used a ton. |
