figuring out how much tea

back in 2014/2015 we did the toast to 20fiftean belgian blonde ale with english breakfast. this had 3 oz total which was 5 bags which went into the boil.

looking like 1oz per gallon. my plan is to hot steep in minimal water and add it to the keg.

brewed on 4/26
high gravity brew worked out great. check notebook notes for exact gravities but we ended up with about 7 gallons of 1080 wort, split into two fermenters, topped up with water. one we stopped at about 5 gallons for 1050 (for the tokyo draft) the other was about 5 gallons as well but OG 1055 since we will dilute later with hot brewed tea.

both were dip hopped. tokyo draft with sorachi ace and lutra yeast, the joyce and vic used tettanger hops and 34/70.

fuggle - mild, wood, grass, and mint.

saaz - mild with pleasant earthy, herbal and floral overtones.

nobility - citrus (lemon, orange), lemongrass, green tea, and herbaceous, with a mixture of floral and spice.

repackaging this for joyce and virgil cherry blossom tea infused japanese rice lager.

will mash for 10 gallons, split wort into two batches, one will be this, one will be the original toyko draft with sorachi ace. need

some basic herbal hops for this that wont interfere with the tea. could use hallertau although those more european. cluster more american. whats asian?

maybe just use nobility....

splitting recipe off to this 10gallon edition. possibly use bavarian lager 2206 leftover from bock but worried about leftover maibock flavors.

adjusting this from last years recipe to use acid malt. surprising this one came out really nice just using the tap water. will go with that again.

adjusting recipe. not messing with water profile much but adding some phosphoric acid to bring pH down. next time just get acid malt. found a nice pilsen water profile but my water is too hard to alter. next time build from RO.

the rice is not flaked rice but rather instant white rice. the weight is dry i.e. before cooking. for instant rice it can directly into mash.
