Notes

All water starts in HLT, 23 gallons. All water additions added to HLT once heat turned on.

This beer came out exactly as we wanted. An easy drinking pale ale with a nice citrusy hop aroma. The verdant IPA yeast was a beast and came out the top of the tank. Will definitely keep this colder next time, maybe 60F.

The aroma from the hop combo of Citra/Motueka was fantastic. Just a nice in your face citrus aroma. The beer did not clear up as I would have expected. pH was a bit off in the mash and could not get it back down so that may have affected it. Cloudy wort went into the kettle.

Ultimately came out great though. Won't change a thing for now.
