Was not able too get the temperature of 51 degrees for the pillsner yeast. Took gravity reading; it was still 1.040 SG. Fermentation never started after a week. Desided to take it out of the cooler and wrap in a blanket to allow the temperatures to gradually rise. This worked for about a day as it had a gradual increase to room temperature of Approximately 71 degrees. Where it started to ferment very rapidly. |

Checked gravity (1.010 SG.). Currently an ABV of 5.25. Moved to secondary carboy to try and let the yeast settle, age and help with clarity. Some fermentation is still taking place. Will allow it to set for another day or so. Tasted the beer and found it was actually pretty good. Holding on to the characteristics expected of the Czech hops. It had a herbal aroma and surprisingly clean flavor.
Due to it being fermented at much warmer temperatures causing a beer haze and a hard fermentation. It is a Pale beer SRM 3-4 with the standard ABV of 5.25. This puts it in the "pale-lager-family" but not sure if this would still qualify as a pilsner. |
