14.0 BrixWRI. Looking good, especially pH. Not sure where we should be with gravity- seems a little low if OG is to be 1.070 but lactose late addition will bump it up a bit. |

Oh what a mess! I used a three-piece airlock and the yeast bubbled through and over it. Replaced airlock with a blow-off tube using 8mm EVA tubing and duo-tight quick connector. I should do blow-off tubes from now on. Wally warned me about this. I think it might be why the yeast did not perform as I expected because some got killed when it went into the vodka in the airlock. |

Yeast put on the brakes. I think there must be Krausen on the RAPT Pill so I have the fermenter a good slosh and shake to try to splash wort over the RAPT Pill and clean it off. |

Removed and Cleaned off RAPT Pill - could not remove schmutz in situ - tasted it and got a lot of hop flavor as in other times I sample from fermenter - almost a Black IPA! - did not taste to sweet, nice smooth mouth feel, no notice of off flavors, earl grey is muted but in the aftertaste clearly - I do feel a little weird 10 min after sampling, Mmm? |

Put in the 10 oz of cocoa nibs that have been soaking in vodka since Nov. 30 mid-day. Will leave no longer than 7 days, so remove and cold crash next Wednesday. |

RAPT Pill battery died while showing 14% battery for almost 18 hours straight. Removed it yesterday, recharged, checked for firmware update (none), closed and aligned the black marks to maintain calibration, measured top beer temperature to be 71.2 F and returned washed and sanitized RAPT Pill to fermenter |

I love the smell of the Earl Grey. I think I left the tea bags in too long. I get some tannins and I get a slight headache like when the Earl grey tea bag is left in too long. Also, the cocoa nibs + vodka was a failure - it adds a sharpness and bitterness that I do not like. Also, it finished a bit high and is sweeter than I wanted. Next time use chocolate bar at flame-out instead.
Homebrew Happy Hour uses 2.5 oz Baker's Chocolate and 1.5 oz cacao nibs at flame out. Maybe try that (https://www.homebrewhappyhour.com/imperial-coffee-stout-breakfast-stout-recipe/) |

after sitting in the keg and drinking most of it over 2 months, it finally started to mellow some of the harsh flavors of the vodka+cocoa nibs. I bottled this version for competition. |
