I like the idea of a beer that is sort of unattainable. It's a rumor or a legend. A distant memory of something that was amazing.

Notes from Recipe Formulation

- The original was a 7 gallon recipe. Am making a 2.75 gallon recipe so using a 0.4 multiplier against all the given quantities.
- The yeast strain seems to have a very narrow ideal temperature range: 65° - 68° F
- I'm debating whether to follow the recipe and carbonate to 1.5 volumes of CO2, or to follow the real ale rules and just use the residual CO2 from fermentation. I think I'll follow the recipe for the first stab.
- I'm using an infusion of boiling to raise from protien to saccharyification rest because I don't want to spend a long time going through the other rests and potentially defeating the purpose of mashing at a high temp.
