Honey boiled, cooled and added to the fermentor at high krausen.
This turned out about as well as I had hoped, although I also didn't really quite know what to expect. What it is NOT is a big sticky sweet mess from not having hop bitterness. There is some dryness from the honey, a bit of roasty bitterness from the brown malt, perhaps a tart note from the acidulated malt, and a fair amount of je-ne-sais-quois from the Heather and other botanicals. 5% of peated malt is about right, I wouldn't go any higher than that. The oats (because Scotland) gave it a nice mouthfeel. I got the honey from a friend who is a beekeeper, and it has really nice character, imparting a certain meady-ness to the brew.
It's really interesting and good - just don't expect "beer" in the usual sense.
