I plan to ferment under pressure, perhaps at around 7 psi.

Consider Burton-upon-Trent water profile but it seems to require a ridiculous amount of salts and has an extremely high sulfur content. So settled on Balanced Profile which has a slightly higher sulfur content than some of the other profiles.
