Notes

Bake the sweet potatoes at 140-145F for 1 hr. before taking them to 350F to finish. Sweet potatoes are high in Beta Amylase, let the enzyme work before killing it off in the bake.

Mash the sweet potato meat and add to the mash at mash-in.
