pH taken about 10-15 minutes into mash. Meter was reading 4.1 in old storage solution but I didn't calibrate. Forgot to add Campden to any water :( |

Forgot to add the sugar. Will add in 1 pint boiled water to go from 5.25 gallons at 1.054 to 5.375 gallons at 1.063. |

Added sugar earlier with 1 pint water. Rehydrated 1 pack of Lalbrew Farmhouse Hybrid Saison Yeast. |

Used spent grains to make new "beer"/NA beer/hop water via parti-gyle. Added ~5 gallons (added ~4 gallons to grains then topped up after removing grains) fresh tap water (from hot water tank) to grains to rinse residual sugars. OG ended up at 1.012. Heated to 180 F or so then cooled to 165F and added 1 oz Amarillo cryo, 1 oz Loral cryo, 1 oz Pink Boots blend for 20 minutes. Left on basement floor to cool, but only got down to 77 overnight. Strapped ice pack on and pitched 1 pack Lalbrew London dry at 73F. Continued chilling down to 66F. Then left alone on floor with t-shirt covering for light protection. Formed very small krausen that evening with some airlock bubbles. Done in about 24 hours or so. |

Taste was very good. A lot of great Belgiany esters with no hints of fusels or off flavors I've gotten with other Belgian yeasts. Tasted somewhat full and kind of sweet especially knowing it was 1.006. I don't think it's too sweet or overpowering esters like I've had with Belgian yeasts in the past. I think this yeast would probably work well for any Belgian/Trappist style. Might try the dreaded Quad again with this one.... We'll see how it is after dry hopping, cold, and carbed though. Feeling positive about this one. |
