Mash with 18 quarts at ~152-154 for one hour, then raise temp with 11 quarts of boiling water. Sparge with 175-180F water |

This includes the Candi Syrup. At +15, the gravity was 1.077 before Candi Syrup and 1.081 after adding Candi Syrup. At end of boil the gravity was 1.084-1.085; before pitching in ~700 mL of yeast starter, which was prepared the night before. |
