Según la levadura si la siembras en seco, se ha de añadir a más de 20 grados. Nosotros la echamos a 24 y ponemos la cámara de fermentar a 20 grados. Después le he ido bajando 3 grados por día hasta que alcanza 15. La fermentación parfece haber sido demasiada rápida la primera parte porque está ya en 1,023. |
