3.25 gal heated to 163 to mash in at 154. Temp dropped from 152.1 to 147.1 over 40-minute mash (cut last 20 minutes to save time). BIAB dunk sparge in room temp water (4 gal) for 10 minutes. |

Pitched yeast once temp dropped to 64. No starter, and expiration date was nearing. Fermentation took a while to start (60-65 hours ish). Also produced a strong sulfur smell for around a 24 hour period around day 4 or 5. Didn't know if that was normal for this yeast. |
