Beer is light on smoke but still nice.. peat smoke is indistinct i.e. doesnt really speak any differently than beechwood smoked malt beers. Id like to try using more to really slap you across the face with peat andor to conjure up flavors of scotch.
At first it wasn't really too bread crackery sweet malty but it is improving over time. Not sure this beer has a lot of room to grow OG wise so to make it a little maltier without changing the color too much consider decoction mash, or maybe some kind of speciality malt. Reading an article rn suggesting melanoidin malt can mimick decoction mash.

updating recipe to brew on cooler/digiboil equipment, lowering efficiency so adding a couple lbs 2 row to boost target OG. going for pils water profile built from RO.
pitching two packs of 34/70 into 2L of 1040 wort two days before.

initial recipe creation!!!
just had a fantastic smoked helles at triple crossing this week made me want to get started on this beer - i will be going for peated malt instead of cherrywood or whatever they were using.
reading to use very very little. i saw some people use like 10% but i will use about 6 or 7. simple malt bill just like alexandra pils. will use nobility hops since i have them on hand. 34/70.
