Notes
  1. Bring 4 litres of water to a rolling boil.

  2. Add a little of the malt extract.

  3. Add the Bramling Cross hops.

  4. Leave for 30 minutes.

  5. Add the rest of the malt extract and the sugar.

  6. Add the Fuggles and Goldings hops at flame-out, whirlpooling the mixture.

  7. Cool the mixture.

  8. Add 6 litres of water to a clean keg (with an air lock).

  9. Add half a campden tablet and let sit for an hour.

  10. Add the mixture to the keg.

  11. Bring the keg to 19 degrees.

  12. Add the S-04 yeast.

  13. Sit the keg at 19 degrees until the airlock becomes inactive.

  14. Seal the keg and sit for another 3 days.

  15. Cold crash to 0.5 degrees C and add pressure of 10 PSI.

  16. Serve from keg at just below room temperature.
